A happy little soup that's low effort and fast (yay and yay)

:INGREDIENTS::
About 2 cups of tomatoes (I used a tub of cherry tomatoes and a can of diced because it's what I had at home)
1 can tomato paste
1 can chickpeas
3 whole garlic cloves, peeled and crushed with back of knife
1 yellow onion, quartered into big chunks
1 1/2 cups water, chicken or vegetable broth
Splash of heavy cream optional
1 Tbs red curry paste (optional)
1 3/4 cup @traderjoes harvest grains blend cooked to package instructions (Sitkans I know it’s tragic we don’t have a Trader Joe’s, but I order my faves off of Amazon when I run out of my haul I bring back from down south trips)
Toppings: red pepper flakes, microgreens, cheese and a good hunk of bread!
::METHOD::
Preheat oven to 425. In a large dutch oven, drizzle olive oil over tomatoes, onion, garlic, chickpeas and season with salt and pepper (and about 1 tbs of red curry paste optional but so good)
Roast for about 20 min until tomatoes are blistered and burst and onion is tender.
Add liquid of choice (more or less can be added depending on thickness preference) and blend until smooth. Stir in cream if you’re adding it and then dump in your Harvest Grains. Enjoy with cheese, your choice of greens, and some good bread!
