The BEST on a hot summer day (okay okay, it’s 48 degrees in Sitka, but still so good). So crunchy, refreshing, nourishing and satisfying.
Throw some cooked and rinsed colddd rice noodles in a big ol bowl. Add some chopped veggies (I did purple cabbage, garden greens, chives and basil from @downtoearthupick , peas, and grated carrots). Toss with peanut sauce (below is the recipe I use, but today I added a little extra water and splash more of rice vinegar to thin it out). Enjoy!
Peanut Sauce
1/3 cup water (can add more or less depending on how thick you want your sauce)
1/3 cup rice vinegar
1 cup peanut butter (smooth)
2 tbs soy sauce
1 Tbs honey
1 Tbs sesame oil
3 garlic cloves
Pinch of salt
Blend ingredients until smooth
