Grilled Corn and Peach Sunshine Bowls with Basil Green Goddess Dressing

This is Summer in a bowl



::FOR THE SALAD::

Olive oil

2 peaches, sliced

2 corn on the cobs, shucked

A few handfuls of your choice greens (I did kale, sliced thin and arugula)

1/2 cup fresh basil, sliced

1 tub fresh mozzarella pearls

1 ish cup cooked quinoa

1/2 cup chopped pistachios

**I skewered the peach slices and grilled them along with the corn cobs until cooked and slightly blackened. Brush peaches and corn with oil before grilling and season with black pepper. Cut kernels from cob when done and assemble everything and combine with following dressing.


::Green Goddess Dressing::

Blend all following ingredients

2 Tbs Green Goddess @Traderjoes seasoning (can order this on Amazon for us sad Alaskans who have no Trader Joe’s nearby

1/4 cup plain Greek yogurt

1/4 cup mayo

Juice of 1/2 lemon

1 Tbs Dijon mustard

1/4 cup water or milk

Handful of spinach

Handful of fresh basil
