The staple-iest of staples in our house, peanut noodles. Cold, hot, arrays of complimentary vegetables either raw OR cooked. It’s really a choose your own adventure (as are the weekly fritattas) and I love me an adaptable easy staple.
This time I did cooked rice noodles, sautéed purple cabbage and matchstick carrots, fried tofu (extra firm tofu, sliced and coated in corn starch and fried in olive oil), and topped with my homemade peanut sauce (recipe below), fresh cilantro, lime, sweet chili sauce, Serrano peppers and green onions!
Easy Homemade Peanut Sauce
1/3 cup water (can add more or less depending on how thick you want your sauce)
1/3 cup rice vinegar
1 cup peanut butter (smooth)
2 tbs soy sauce
1 Tbs honey
1 Tbs sesame oil
2-3 garlic cloves
Pinch of salt
Blend ingredients until smooth
